I feel like the biggest difference going from 2 children to 3 children is having to stay super organized. It’s much harder to just “run up to the store” when you run out of peanut butter.
Let’s face it, dragging three kids into a grocery store is not ideal. Now we all know that I am not the sharpest tool in the shed, which may explain why I am just now learning this lesson.
Cook double the yum- foods that can be used two nights in a row.
Last night, for instance I roasted a chicken with steamed carrots a side of orzo.
Tonight we had the best homemade chicken orzo soup. All I had to do was pull apart my chicken leftovers, add the homemade broth and another 26 oz container organic chicken broth (in a dutch oven), sea salt and cracked pepper. I have some fresh rosemary and parsley growing outside in pots which gives it a nice little kick.
Voila- homemade delicious chicken orzo soup in 10 minutes.
Chicken Orzo Soup
- Leftover whole chicken
- orzo (or rice)
- leftover broth
- 28 oz container chicken broth
- sea salt
- cracked pepper
- fresh rosemary
Put all ingredients into a large dutch oven and heat for 10 minutes. Add fresh spices and let simmer for another 5-10 minutes. Would be good served with a warm french loaf and Caesar salad.
Now why on earth haven’t I thought of this before?
