Accidental Homemade Blueberry Muffins:
Unintentionally, I made the Pioneer Woman’s Awesome-est Blueberry Muffins. Originally I started making banana cinnamon muffins, only to realize I had no bananas. Don’t you hate it when that happens? It’s just too much effort to have to go through a check-list of ingredients prior to throwing it all in a big ol’ bowl.
So now I have a mixing bowl full of 2/3 cup sugar and 2 eggs. What’s a girl to do?
While there were no bananas on hand I did have a pint of fresh blueberries in my fridge. Go figure. No one in my family, except for me, likes blueberries. I don’t particularly like them either now that I think about it. Not sure why they were in my fridge. I think I saw something last weekend on Food Network where Ree made bluberry pancakes. Or maybe I bought them in hopes that I would want to will myself to like them. What was I talking about again? Oh, the accidental homemade blueberry muffins.
These turned out delicious (even thought I used more sugar and eggs than the recipe called for). I haven’t baked much with yogurt but am thinking of incorporating it more. (Especially when it’s organic whole milk yogurt from trader joes- talk about delicious!)
The mini-muffins are the perfect snack size so I can pop one (or two, or four) in my mouth and pretend like it was just a taste. A taste of the perfect accidental Homemade Blueberry Muffins.
