This year’s Fourth of July brings a full three-day weekend so I figured I’ll take that inch for a mile- and make an entire week of the holiday.
We’ve been down at the Coast all week for some Independence Day pre-partying. That’s how we roll in Florida when it’s 100 degrees and climbing. We did manage to get more work done around the cottage and things are still moving along. For the first time in 74 years, there is cable running to the HDTV (a whopping 21 channels which is great for those rainy days), stepping stones down to the blue water (no more sand spurs), and new a new ceiling fan to blow the cool air around the new kitchen.
In just four short days the five of us managed to devour all those Publix bags which were filled with groceries- seedless watermelon, Oh’s cereal, flank steak, Honest Kids juice boxes, snacks, skim milk, bottled waters, and even a bag of Doritos (because I live to live on the edge that way)… and now it’s time to plan meals for the rest of the week. I’m pretending to be an adult and planning ahead my next set of beach meals- I’m thinking fried chicken, sliced red tomatoes with salt, pepper and balsamic, butter beans, watermelon triangles and perhaps a shrimp boil for the actual fourth festivities. I’ve never actually made a shrimp boil but if it comes with instructions I’m sure I can manage. I have cooked a time or two before.
Thanks to my FitBit Flex (which feels a bit like a house arrest bracelet- not that I have worn one before) I’ve been making sure I’m stepping off these fried chicken calories and drinking so much water that I feel as though I might just float right into the Gulf”s flat horizon. (That and my highs chool girlfriends have a friendly group competition going).
Got to try to get bikini ready so I can jump off the dock at the upcoming high school girls weekend (don’t worry Mr. Robinson I am only kidding!) Those days ended in college (as if I would ever jump off a dock!).
Now it’s back home, more unpacking, washing, drying and repacking. But I suppose that’s what summer is all about.
